Once you’ve tried this you won’t go back! This chicken salad with apple, bacon and blue cheese can be served on a sandwich with lettuce and tomato, or served on a bed of greens with other salad ingredients such as tomatoes, cucumbers and sliced avocado. Enjoy!
Chicken Salad with Apple, Bacon and Blue Cheese
- 2 boneless breasts of chicken, cooked and chopped
- 3 slices crispy bacon, chopped
- 1 apple, chopped
- ¼ cup chopped red onion
- ¼ cup crumbled blue cheese
- 4 tablespoons mayonnaise
- Freshly ground black pepper
Note: You can substitute thick, chunky blue cheese dressing for the crumbled blue cheese and mayonnaise.
Chop and toss all ingredients, adding the mayonnaise or blue cheese dressing last. Add black pepper to taste and serve.
