This was by far the best meal I had last week. With leftover corned beef from St Patrick’s day, I made corned beef hash with potatoes, parsnip and onion. The sunny-side-up eggs (from my neighbor’s chickens) topped it off – loose, just the way I like them!  See the corned beef hash recipe here.
